Bliss Beet Bites

Ingredients:

  • ½ cup red beets, cooked and chopped or canned/jarred, drained well
  • ½ cup dry oats (quick or rolled)
  • ¼ cup wheat germ
  • 1 tablespoon coconut oil 
  • 1–2 tablespoons grade A maple syrup, to taste
  • ½ teaspoon organic orange zest

Optional:

  • ¼ cup chocolate chips made with at least 60% cacao 
  • 1 scoop protein powder

Step-by-Step:

Add all ingredients to a food processor, and blend together until thoroughly mixed. Stir in optional ingredients, if desired. If using protein powder, add a little water. Transfer dough to a bowl and knead. Cover, and chill dough in the refrigerator for 10 minutes. 

Remove dough from the refrigerator, and roll into 1”-diameter balls. Serve or place in an airtight container, and refrigerate for up to 3 days or freeze for up to 3 months.

Beets are one of the few vegetables that contain highly bioactive betalains, which have anti-inflammatory properties. Consumption of beets may color the urine and stool pink or red. 

Wheat germ—the innermost portion of the wheat kernel—contains a healthy dose of protein and fiber, and is nutrient rich in vitamins and minerals. Do not consume wheat germ if you follow a gluten-free diet.
